Ingredients:
- 4 cups (600g) Roma tomatoes, seeded and finely diced
- 3 tbsp (45ml) extra virgin olive oil
- 1 tbsp (15ml) fresh lemon juice
- 1/4 cup (15g) fresh basil, chiffonade
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 1 loaf (500g) French baguette, sliced into 1/2-inch rounds
- 2 tbsp (30ml) extra virgin olive oil
- 2 cloves (6g) garlic, peeled and halved
- 1/2 cup (120ml) balsamic vinegar
- 1 tsp (5g) honey
Instructions:
- Place diced tomatoes in a strainer and sprinkle with sea salt. Let them rest for 10 minutes to release excess moisture.
- In a mixing bowl, combine the drained tomatoes, 3 tbsp olive oil, lemon juice, and cracked black pepper.
- Gently fold in the fresh basil just before serving to keep the leaves vibrant and green.
- Preheat your oven to 400°F (200°C).
- Arrange bread slices on a baking sheet and lightly brush both sides with 2 tbsp olive oil.
- Bake for 5–7 minutes, or until the edges are golden-brown and the center is firm.
- Immediately upon removing from the oven, rub the cut side of a raw garlic clove across the surface of each warm toast.
- Pour balsamic vinegar and optional honey into a small saucepan over medium heat.
- Simmer without stirring for 8–10 minutes until the liquid reduces by half and achieves a velvety, syrupy consistency.
- Carefully spoon the tomato mixture onto the crostini and drizzle with the reduction.
