Ingredients:
- 1 lb (450g) Rotini or Fusilli pasta
- 1 tbsp (15g) Salt
- 4 cups (600g) Sweet corn kernels
- 1 tbsp (15ml) Olive oil
- 1/2 cup (50g) Cotija cheese, crumbled
- 1/4 cup (10g) Fresh cilantro, chopped
- 1/4 cup (40g) Red onion, finely diced
- 1/2 cup (115g) Mayonnaise
- 1/4 cup (60g) Mexican Crema or Sour Cream
- 2 tbsp (30ml) Freshly squeezed lime juice
- 1 tsp (2g) Chili powder
- 1/2 tsp (1g) Smoked paprika
- 1/2 tsp (3g) Garlic powder
Instructions:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain in a colander and rinse with cold water immediately.
- Heat olive oil in a skillet over medium-high heat. Add corn kernels in a single layer and let sit undisturbed for 2-3 minutes until deep golden-brown. Stir and cook for another 2 minutes, then remove from heat and let cool slightly.
- In a small bowl, whisk together mayonnaise, Mexican crema, lime juice, chili powder, smoked paprika, and garlic powder until velvety.
- In a large mixing bowl, combine the cooled pasta, charred corn, diced red onion, and half of the cilantro.
- Pour the dressing over the pasta mixture and toss gently until every spiral is coated.
- Fold in the crumbled Cotija cheese and garnish with the remaining cilantro.
