Ingredients:
- 1 lb (450g) lean ground beef
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- 1 tbsp (15ml) olive oil
- 1 tsp (5g) salt
- ½ tsp (3g) black pepper
- 8 oz (225g) cream cheese, softened
- ½ cup (120g) sour cream
- 1 tbsp (15ml) Worcestershire sauce
- ½ tsp (3g) onion powder
- 3 medium (600g) zucchini, sliced into ¼ inch rounds
- 2 cups (225g) shredded mozzarella cheese
- ¼ cup (25g) grated parmesan cheese
- 1 tbsp (4g) dried Italian seasoning
Instructions:
- Heat olive oil in a large skillet over medium high heat. Add the ground beef and diced onion, cooking until the meat browns and onions turn translucent. Note: Don't stir too often; let the beef sear to get more flavor.
- Stir in the minced garlic, salt, and pepper. Cook for 60 seconds until the garlic smells fragrant. Drain any excess grease from the pan. Note: Leaving too much fat makes the casserole oily.
- Reduce the heat to medium low. Stir in the softened cream cheese, sour cream, Worcestershire sauce, and onion powder. Stir continuously until the mixture is smooth and velvety.
- Remove the beef mixture from the pan and set it aside in a bowl.
- In the same skillet, add the zucchini slices and Italian seasoning. Sauté for 3-5 minutes until the edges start to soften. Note: We aren't fully cooking them here, just removing moisture.
- Layer the sautéed zucchini in the 9x13 inch baking dish. Spread the beef mixture evenly over the top.
- Sprinkle the shredded mozzarella and grated parmesan over the beef.
- Bake at 375°F (190°C) for 30 minutes until the cheese crust is golden and bubbly.
