Ingredients:

  • 3 lb beef brisket
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp liquid smoke
  • 1.5 cups BBQ sauce
  • 2 tbsp unsalted butter

Instructions:

  1. Pat the brisket completely dry with paper towels. Note: Wet meat steams instead of searing.
  2. Mix brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this mixture generously into all sides of the meat.
  3. Heat a cast iron skillet over medium high heat with a splash of oil. Sear the brisket for 3–5 minutes per side until a dark mahogany crust forms.
  4. Remove the meat and set it aside on a plate.
  5. Pour beef broth into the hot skillet, scraping up the brown bits from the bottom. Pour this liquid into the slow cooker.
  6. Place the seared brisket in the slow cooker fat side up.
  7. Pour over the Worcestershire sauce, liquid smoke, and half of the BBQ sauce.
  8. Cover and cook on LOW for 8 hours until the meat yields easily to a fork.
  9. Remove the meat and place it on a baking sheet.
  10. Brush with the remaining BBQ sauce and melted butter. Broil in the oven for 3–5 minutes until the sauce bubbles and caramelizes.
