Ingredients:

  • 1 lb cooked chicken breast, shredded or cubed
  • 1 cup dill pickles, finely diced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons pickle brine
  • 3 tablespoons fresh dill, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp cracked black pepper
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely minced

Instructions:

  1. Prepare the chicken by shredding or cubing it into bite-sized pieces. Ensure the chicken is completely cooled before mixing.
  2. In a large mixing bowl, whisk together the Greek yogurt, mayonnaise, pickle brine, fresh dill, garlic powder, and black pepper until a smooth, stable emulsion is formed.
  3. Add the diced pickles, celery, and minced red onion to the dressing base and stir to combine.
  4. Gently fold in the shredded chicken using a silicone spatula until every piece is evenly coated in the creamy dressing.
