Ingredients:

  • 12-15 whole grain crackers or mini pita rounds (approx. 3 oz / 85g)
  • 1/4 cup (60ml) low-sodium marinara sauce
  • 1/2 cup (56g) shredded part-skim mozzarella cheese
  • 10-12 slices mini pepperoni or turkey pepperoni (approx. 1 oz / 28g)

Instructions:

  1. Measure the marinara sauce into a leak-proof condiment cup and snap the lid tight.
  2. Portion the shredded mozzarella and pepperoni slices into the larger compartments of a 3-compartment bento box.
  3. Place the crackers in the largest dry compartment, ensuring they are physically separated from the cheese and meat using bento dividers to maintain crispness.
  4. To assemble at lunchtime, use a spoon or pepperoni slice to spread a thin layer of sauce onto a cracker, top with a pinch of mozzarella and one pepperoni slice, and repeat.
