Ingredients:

  • 1.5 lbs ground beef (80/20 lean-to-fat ratio)
  • 1.5 lbs ground pork
  • 1 cup old-fashioned rolled oats
  • 1/2 cup evaporated milk
  • 2 large eggs, beaten
  • 1 medium onion, finely diced
  • 1 green bell pepper, finely diced
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar

Instructions:

  1. In a large mixing bowl, combine the diced onion, bell pepper, beaten eggs, evaporated milk, and rolled oats. Stir and let the oats hydrate for a few minutes.
  2. Stir in the sea salt, black pepper, garlic powder, and onion powder.
  3. Add the ground beef and ground pork to the bowl. Gently fold the meat into the binder using your hands or a spoon, stopping the moment ingredients are combined to avoid over-mixing.
  4. Preheat your oven to 350°F (175°C). Press the meat mixture gently into a 9x5 inch loaf pan or shape it into a uniform log on a rimmed baking sheet.
  5. Bake the meatloaf for 45 minutes.
  6. While the meat is roasting, whisk together the ketchup, brown sugar, mustard, and vinegar in a small pan over low heat until smooth.
  7. Apply the Southern glaze to the top of the meatloaf and return to the oven to bake for the final 15 minutes.
