Ingredients:
- 2 cups mashed potatoes (approx. 450g)
- 0.5 cup all-purpose flour (65g) plus extra for dusting
- 1 large egg, room temperature
- 0.5 tsp sea salt
- 0.5 cup lean ground beef (90/10), approx. 115g
- 0.5 cup shredded mozzarella or sharp cheddar cheese (50g)
- 2 stalks green onions, finely minced
- 4 tbsp neutral oil for frying
Instructions:
- In a large bowl, combine the mashed potatoes and the egg. Gradually fold in the 1/2 cup of flour until a soft, non-sticky dough forms, similar to soft playdough.
- Brown the ground beef in a small pan over medium-high heat until no pink remains (about 5 minutes). Drain the excess fat immediately. Stir in the minced green onions and a pinch of salt.
- Divide the potato dough into 8 equal balls. Flatten one ball in your palm into a disk about 1/2 inch thick. Place a teaspoon of beef and a pinch of cheese in the center. Fold the edges over and press into a flat patty, ensuring there are no cracks.
- Heat the oil in a skillet over medium-high heat until it shimmers. Fry the cakes for 3–4 minutes per side until the crust is deeply golden and crisp.
- Transfer the finished cakes to a wire rack to allow air circulation, which maintains the crispness of the exterior.
