Ingredients:

  • 4 cups (600g) cooked turkey breast, finely diced
  • ½ cup (60g) celery, finely minced
  • ¼ cup (40g) red onion, finely minced
  • ¾ cup (170g) mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) Dijon mustard
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper
  • ¼ tsp (1g) garlic powder
  • 2 tbsp (8g) fresh parsley, chopped
  • 1 tbsp (15ml) fresh lemon zest

Instructions:

  1. Dice the cooked turkey into small, uniform pieces (about ¼ inch). Finely mince the celery and red onion. Place all three ingredients in a large mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, pepper, and garlic powder until the mixture is smooth and fully integrated.
  3. Pour the dressing over the turkey mixture and gently fold the ingredients together using a rubber spatula until the turkey is evenly coated.
  4. Stir in the fresh parsley and lemon zest last to maintain their vibrant color and aromatic oils.
