Ingredients:
- 3 lbs chicken wings (flats and drums separated)
- 1 tbsp aluminum-free baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/3 cup cayenne sauce
- 1/4 cup unsalted butter, melted
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 clove garlic, minced
- 1/2 cup molasses-based BBQ sauce
- 1 tsp apple cider vinegar
- 1/2 tsp smoked paprika
- 2 tbsp melted butter
- 1 tbsp lemon pepper seasoning
- 1 tsp fresh lemon juice
Instructions:
- Use paper towels to pat every wing bone-dry to ensure a crispy crust.
- In a large bowl, toss wings with baking powder, salt, pepper, and garlic powder until evenly coated.
- Preheat oven to 425°F (218°C) and place a wire cooling rack inside a large rimmed baking sheet.
- Space wings out on the rack, ensuring they do not touch to allow maximum airflow.
- Roast for 40 minutes, flipping halfway through, until the skin is mahogany-colored and crisp.
- While wings roast, prepare the four sauces (Buffalo, Honey Garlic, Smoky BBQ, and Zesty Lemon Pepper) in separate small mixing bowls.
- Immediately after removing wings from the oven, divide them among the bowls and toss until fully glazed.
