Ingredients:

  • 3 lbs chicken wings (flats and drums separated)
  • 1 tbsp aluminum-free baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/3 cup cayenne sauce
  • 1/4 cup unsalted butter, melted
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 clove garlic, minced
  • 1/2 cup molasses-based BBQ sauce
  • 1 tsp apple cider vinegar
  • 1/2 tsp smoked paprika
  • 2 tbsp melted butter
  • 1 tbsp lemon pepper seasoning
  • 1 tsp fresh lemon juice

Instructions:

  1. Use paper towels to pat every wing bone-dry to ensure a crispy crust.
  2. In a large bowl, toss wings with baking powder, salt, pepper, and garlic powder until evenly coated.
  3. Preheat oven to 425°F (218°C) and place a wire cooling rack inside a large rimmed baking sheet.
  4. Space wings out on the rack, ensuring they do not touch to allow maximum airflow.
  5. Roast for 40 minutes, flipping halfway through, until the skin is mahogany-colored and crisp.
  6. While wings roast, prepare the four sauces (Buffalo, Honey Garlic, Smoky BBQ, and Zesty Lemon Pepper) in separate small mixing bowls.
  7. Immediately after removing wings from the oven, divide them among the bowls and toss until fully glazed.
