Ingredients:

  • 1.5 lbs sirloin tip, New York Strip, or Ribeye, cut into 1-inch cubes
  • 1 tbsp avocado oil or grapeseed oil
  • 1.5 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 0.5 tsp smoked paprika
  • 4 tbsp unsalted high-quality butter
  • 6 cloves fresh garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 0.25 tsp red pepper flakes

Instructions:

  1. Pat the steak cubes extremely dry with paper towels to ensure a proper sear. In a large bowl, toss the cubes with the salt, pepper, and paprika, and avocado oil until evenly coated.
  2. Heat a heavy-bottomed cast iron skillet over high heat until wisps of smoke appear. Add the steak bites in a single layer, working in batches if necessary to avoid crowding.
  3. Let the steak sit undisturbed for 2 minutes to develop a mahogany crust. Toss quickly and sear for another 1-2 minutes.
  4. Reduce the heat to medium-low. Add the butter, minced garlic, and red pepper flakes to the pan. Baste the steak bites in the melting butter for 1 minute until the garlic is fragrant and golden but not burnt.
  5. Remove from heat immediately. Garnish with fresh parsley and serve hot.
