Ingredients:
- 2 cups corn kernels (fresh or frozen/thawed)
- 3/4 cup all-purpose flour
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1 large egg
- 1/4 cup whole milk
- 2 tbsp melted unsalted butter
- 1/4 tsp black pepper
- 1/2 cup neutral oil (canola or vegetable)
Instructions:
- In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, sugar, salt, and black pepper.
- In a separate small bowl, beat the egg then stir in the whole milk and melted unsalted butter.
- Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix to avoid making the fritters tough.
- Fold in the corn kernels until they are evenly coated in the batter.
- Heat the neutral oil in a skillet over medium-high heat until it reaches approximately 365°F (185°C) or until a small drop of batter sizzles immediately.
- Carefully drop 2 tablespoons of batter per fritter into the oil, flattening them slightly with the back of a spoon.
- Fry for 3–4 minutes per side until the fritters reach a deep mahogany-gold color.
- Remove fritters with a slotted spoon and place them immediately on a wire rack set over paper towels to maintain crunch.
