Ingredients:

  • 2 cups corn kernels (fresh or frozen/thawed)
  • 3/4 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 large egg
  • 1/4 cup whole milk
  • 2 tbsp melted unsalted butter
  • 1/4 tsp black pepper
  • 1/2 cup neutral oil (canola or vegetable)

Instructions:

  1. In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, sugar, salt, and black pepper.
  2. In a separate small bowl, beat the egg then stir in the whole milk and melted unsalted butter.
  3. Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix to avoid making the fritters tough.
  4. Fold in the corn kernels until they are evenly coated in the batter.
  5. Heat the neutral oil in a skillet over medium-high heat until it reaches approximately 365°F (185°C) or until a small drop of batter sizzles immediately.
  6. Carefully drop 2 tablespoons of batter per fritter into the oil, flattening them slightly with the back of a spoon.
  7. Fry for 3–4 minutes per side until the fritters reach a deep mahogany-gold color.
  8. Remove fritters with a slotted spoon and place them immediately on a wire rack set over paper towels to maintain crunch.
