Ingredients:
- 3 lbs chicken wings, split into flats and drums
- 1 tbsp avocado oil
- 1 tbsp baking powder
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp garlic powder
- ⅓ cup honey
- ⅓ cup Sriracha sauce
- 1 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp fresh lime juice
Instructions:
- Pat the chicken wings aggressively with paper towels to remove all surface moisture.
- In a large bowl, toss wings with avocado oil, then sprinkle in baking powder, salt, pepper, and garlic powder until evenly coated.
- Place a wire cooling rack inside a baking sheet and arrange wings in a single layer, ensuring they do not touch.
- Roast at 425°F (220°C) for 25 minutes.
- Flip each wing and roast for another 20–25 minutes until the skin is golden brown and rigid.
- Remove from oven and let the wings sit on the rack for 5 minutes to allow the crust to set.
- While wings roast, combine honey, Sriracha, soy sauce, rice vinegar, and sesame oil in a saucepan; simmer over medium-low heat for 3-5 minutes until thickened.
- Stir fresh lime juice into the glaze at the end of simmering.
- Place hot wings in a clean bowl, pour the glaze over them, and toss until coated.
- Optional: Return glazed wings to the oven under the broiler for 2 minutes for a tacky finish.
