Ingredients:

  • 3 lbs chicken wings, split into flats and drums
  • 1 tbsp avocado oil
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ⅓ cup honey
  • ⅓ cup Sriracha sauce
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp fresh lime juice

Instructions:

  1. Pat the chicken wings aggressively with paper towels to remove all surface moisture.
  2. In a large bowl, toss wings with avocado oil, then sprinkle in baking powder, salt, pepper, and garlic powder until evenly coated.
  3. Place a wire cooling rack inside a baking sheet and arrange wings in a single layer, ensuring they do not touch.
  4. Roast at 425°F (220°C) for 25 minutes.
  5. Flip each wing and roast for another 20–25 minutes until the skin is golden brown and rigid.
  6. Remove from oven and let the wings sit on the rack for 5 minutes to allow the crust to set.
  7. While wings roast, combine honey, Sriracha, soy sauce, rice vinegar, and sesame oil in a saucepan; simmer over medium-low heat for 3-5 minutes until thickened.
  8. Stir fresh lime juice into the glaze at the end of simmering.
  9. Place hot wings in a clean bowl, pour the glaze over them, and toss until coated.
  10. Optional: Return glazed wings to the oven under the broiler for 2 minutes for a tacky finish.
