Instructions:

  1. Pat the chicken cubes completely dry with paper towels to ensure a crisp exterior.
  2. In a large mixing bowl, toss the chicken cubes with olive oil, lemon juice, garlic powder, smoked paprika, onion powder, salt, black pepper, and cayenne pepper until evenly coated.
  3. Preheat oven to 400°F (200°C). Spread the chicken bites in a single layer on a parchment-lined baking sheet, ensuring the pieces are not touching.
  4. Bake for 15-20 minutes. Remove from the oven when the internal temperature reaches 160°F (71°C).
  5. Allow the chicken to rest briefly; residual heat will bring the internal temperature to the safe 165°F (74°C).
