Ingredients:
- 1.5 lbs boneless skinless chicken breasts, sliced into thin cutlets
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp vegetable oil
Instructions:
- Pat the chicken cutlets completely dry with paper towels and season both sides evenly with salt and pepper.
- Heat one tablespoon of oil in a 12-inch stainless steel or cast-iron skillet over medium-high heat until it shimmers.
- Add the chicken to the pan without crowding. Cook for 5-7 minutes per side until a golden-brown crust forms and the internal temperature reaches 165°F (74°C). Remove chicken to a plate.
- Reduce heat to medium. Add the butter and minced garlic to the skillet. Stir for 60 seconds until the butter is foaming and fragrant.
