Ingredients:

  • 1 lb lean ground beef (80/20)
  • 1 tbsp taco seasoning
  • 16 oz refried beans
  • 2 tbsp water
  • 8 flour tortillas (6-inch)
  • 1/2 cup neutral oil
  • 1 cup red enchilada sauce
  • 2 cups Mexican blend cheese
  • 1/2 cup Roma tomatoes, diced
  • 1/4 cup green onions, sliced
  • 2 tbsp black olives, sliced

Instructions:

  1. Place the ground beef in a skillet over medium-high heat. Break into small crumbles and cook until browned. Drain excess fat. Stir in taco seasoning and water, simmering for 2 minutes.
  2. Heat neutral oil in a separate pan over medium heat. Fry each flour tortilla for about 1 minute per side until rigid and mahogany-colored. Drain on paper towels.
  3. In a small saucepan, heat the refried beans with 2 tbsp water to create a smooth, spreadable emulsion.
  4. Assemble the pizzas by spreading a layer of beans and seasoned beef onto four of the fried tortillas. Top each with a second fried tortilla.
  5. Spread red enchilada sauce over the top tortilla and sprinkle generously with the Mexican cheese blend.
  6. Place pizzas on a baking sheet and broil on high for 2-3 minutes until the cheese is melted and bubbling. Top with tomatoes, green onions, and olives before slicing.
