Ingredients:
- 1 lb lean ground beef (80/20)
- 1 tbsp taco seasoning
- 16 oz refried beans
- 2 tbsp water
- 8 flour tortillas (6-inch)
- 1/2 cup neutral oil
- 1 cup red enchilada sauce
- 2 cups Mexican blend cheese
- 1/2 cup Roma tomatoes, diced
- 1/4 cup green onions, sliced
- 2 tbsp black olives, sliced
Instructions:
- Place the ground beef in a skillet over medium-high heat. Break into small crumbles and cook until browned. Drain excess fat. Stir in taco seasoning and water, simmering for 2 minutes.
- Heat neutral oil in a separate pan over medium heat. Fry each flour tortilla for about 1 minute per side until rigid and mahogany-colored. Drain on paper towels.
- In a small saucepan, heat the refried beans with 2 tbsp water to create a smooth, spreadable emulsion.
- Assemble the pizzas by spreading a layer of beans and seasoned beef onto four of the fried tortillas. Top each with a second fried tortilla.
- Spread red enchilada sauce over the top tortilla and sprinkle generously with the Mexican cheese blend.
- Place pizzas on a baking sheet and broil on high for 2-3 minutes until the cheese is melted and bubbling. Top with tomatoes, green onions, and olives before slicing.
