Ingredients:
- 4 cups (600g) frozen sweet corn
- 2 tbsp (28g) unsalted butter
- 1 tbsp (15ml) neutral oil
- 8 oz (225g) cream cheese, softened
- 1/2 cup (120g) sour cream
- 1/4 cup (60ml) mayonnaise
- 2 cloves (6g) garlic, minced
- 1 tsp (2g) chili powder
- 1/2 tsp (1g) smoked paprika
- 1/4 tsp (1g) cayenne pepper
- 1/2 cup (50g) Cotija cheese, crumbled
- 1/4 cup (15g) fresh cilantro, chopped
- 1 tbsp (15ml) fresh lime juice
- salt to taste
- black pepper to taste
Instructions:
- Place a skillet over medium-high heat with the neutral oil and unsalted butter.
- Once the butter foams and browns, add the corn in a single layer and let it sit undisturbed for 2–3 minutes until mahogany-colored.
- Stir and cook for another 2 minutes until nutty and toasted, then remove from heat and let cool slightly.
- In a mixing bowl, stir together the softened cream cheese, sour cream, and mayonnaise until smooth and velvety.
- Fold in the minced garlic, chili powder, smoked paprika, and cayenne pepper until the base is a uniform orange-red hue.
- Gently fold the charred corn into the creamy base.
- Stir in the crumbled Cotija cheese and chopped cilantro.
- Drizzle in the fresh lime juice, stir to emulsify, and season with salt and black pepper to taste.
