  • 4 oz cream cheese, softened
  • 1/2 cup full-fat sour cream
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 cups shredded Monterey Jack cheese
  • 1 cup buttery round crackers, crushed
  • 4 tbsp unsalted butter, melted
  • 6 slices thick-cut bacon, cooked and crumbled
  • 2 tbsp fresh green onions, thinly sliced

Instructions:

  1. Preheat your oven to 375°F (190°C). Arrange the chicken breasts in a single layer in a lightly greased 9x13 inch baking dish. Season both sides evenly with salt and pepper. Note: Greasing the dish prevents the cheese from sticking to the sides.
  2. In a medium mixing bowl, whisk together the softened cream cheese, sour cream, mayonnaise, garlic powder, and onion powder until smooth. Whisk until no white lumps of cream cheese remain.
  3. Fold in 1 cup of the shredded Monterey Jack cheese using a spatula. Stir gently to distribute the cheese evenly.
  4. Spread the cream cheese mixture evenly over the chicken cutlets, ensuring they are fully covered to seal in moisture. Note: The sauce acts as an insulator for the lean meat.
  5. In a separate small bowl, toss the crushed crackers with the 4 tbsp of melted butter. Coat every crumb in fat for maximum crunch.
  6. Sprinkle the remaining 1/2 cup of shredded cheese over the chicken, followed by the buttered cracker crumbs and crumbled bacon. Distribute the bacon well so every bite gets some smoke.
  7. Place the dish in the oven and bake for 25 minutes until the topping is golden brown and bubbly.
  8. Check for an internal temperature of 165°F using a meat thermometer. Insert the probe into the thickest part of the meat.
  9. Remove from the oven and let the dish rest for 5 minutes. The sauce will thicken as the temperature drops slightly.
  10. Garnish with sliced green onions before serving.
