Ingredients:

  • 1.5 lbs cooked chicken thighs, shredded
  • 1 cup barbecue sauce
  • 1 tbsp apple cider vinegar
  • 1/2 tsp smoked paprika
  • 1 pack (12 count) Hawaiian sweet rolls
  • 1.5 cups sharp cheddar cheese, shredded
  • 1/2 cup red onion, thinly sliced
  • 3 tbsp unsalted butter, melted
  • 1 clove garlic, minced
  • 1 tsp dried parsley
  • 1 pinch salt

Instructions:

  1. In a large mixing bowl, toss the shredded chicken with the barbecue sauce, apple cider vinegar, and smoked paprika until fully coated and glossy.
  2. Using a serrated knife, slice the entire block of Hawaiian rolls in half horizontally without separating the individual rolls.
  3. Place the bottom half of the rolls into a 9x13 inch baking dish.
  4. Spread the BBQ chicken mixture evenly across the bottom buns, then top with sliced red onions and shredded cheddar cheese.
  5. Place the top half of the rolls over the cheese layer.
  6. Whisk together melted butter, minced garlic, and parsley; brush the mixture liberally over the top of the buns.
  7. Bake in a preheated oven at 350°F (175°C) for 15–20 minutes until the cheese is bubbling and the tops are golden brown.
