Ingredients:

  • 1.5 lbs Fresh Atlantic salmon, skin removed and cut into 1-inch cubes
  • 1 tbsp Avocado oil
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 0.5 tsp Kosher salt
  • 0.5 tsp Cracked black pepper
  • 0.33 cup Plain Greek yogurt
  • 3 tbsp Sweet chili sauce
  • 2 tbsp Sriracha
  • 1 tsp Rice vinegar
  • 1 tsp Honey
  • 2 cups Cooked jasmine rice
  • 1 English cucumber, sliced
  • 1 Avocado, diced
  • 1 tbsp Green onions, sliced (optional garnish)
  • 1 tsp Toasted sesame seeds (optional garnish)

Instructions:

  1. Pat the salmon cubes completely dry with paper towels to ensure a crispy crust.
  2. In a large mixing bowl, toss the salmon cubes with avocado oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Preheat the air fryer to 400°F (200°C).
  4. Arrange the salmon bites in a single layer in the air fryer basket. Cook for 8 minutes until the edges are charred and the centers are flaky.
  5. While the salmon cooks, whisk together the Greek yogurt, sweet chili sauce, Sriracha, rice vinegar, and honey in a small bowl until smooth and emulsified.
  6. Remove the salmon from the air fryer and toss gently with the sauce or drizzle the sauce over the bites.
  7. Assemble the bowls by dividing the cooked jasmine rice, sliced cucumber, and diced avocado among four bowls. Top with the Bang Bang salmon and garnish with green onions and sesame seeds.
