Ingredients:
- 1 can (15 oz / 425g) refried beans
- 1/2 cup (120ml) water or lime juice
- 1 cup (240g) sour cream
- 1 tbsp (3g) taco seasoning
- 2 cups (340g) mashed avocado
- 1 cup (250ml) pico de gallo
- 1 1/2 cups (170g) shredded Mexican blend cheese
- 1/2 cup (100g) sliced black olives
- 1/4 cup (15g) chopped green onions
- 2 tbsp (8g) fresh chopped cilantro
Instructions:
- Mix the refried beans with water or lime juice in a small bowl. Stir until the beans are smooth and spreadable.
- Spread the bean mixture across the bottom of the glass dish. Note: Push them all the way to the edges to create a solid anchor.
- Whisk the sour cream and taco seasoning in a medium bowl. Mix until the color is uniform and the texture is velvety.
- Dollop the seasoned cream over the beans. Note: Smooth it out into an opaque layer to seal the beans.
- Spoon the mashed avocado over the cream. Press gently until it reaches the edges of the dish.
- Add the well drained pico de gallo on top of the avocado. Note: Extra water here will ruin the Seven Layer Dip structure.
- Sprinkle the shredded Mexican blend cheese over the tomatoes. Ensure even coverage for a consistent salty hit.
- Scatter the sliced black olives across the cheese.
- Top with chopped green onions and fresh cilantro. The smell of the fresh cilantro should be bright and peppery.
