Ingredients:
- 1 lb smoked kielbasa, sliced into 1/2 inch rounds
- 1 lb baby gold potatoes, quartered
- 2 cups broccoli florets, cut into small pieces
- 1 large red bell pepper, chopped into 1-inch squares
- 1 medium red onion, cut into thick wedges
- 3 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Note: Give it at least 10 minutes to fully heat up.
- Slice the smoked kielbasa into 1/2 inch rounds.
- Quarter the baby gold potatoes.
- Chop the red bell pepper into 1 inch squares and cut the red onion into thick wedges.
- Toss the sausage, potatoes, peppers, and onions in a large bowl with olive oil, oregano, garlic powder, salt, and pepper. Note: Toss vigorously so everything is glossy.
- Spread the mixture on a parchment lined sheet in a single layer. Ensure no pieces overlap.
- Roast for 15 minutes until the sausage begins to brown.
- Remove the pan and stir in the broccoli florets.
- Return to the oven for 15 minutes until the potatoes are golden brown and broccoli tips are charred.
