Ingredients:

  • 1 lb smoked kielbasa, sliced into 1/2 inch rounds
  • 1 lb baby gold potatoes, quartered
  • 2 cups broccoli florets, cut into small pieces
  • 1 large red bell pepper, chopped into 1-inch squares
  • 1 medium red onion, cut into thick wedges
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Note: Give it at least 10 minutes to fully heat up.
  2. Slice the smoked kielbasa into 1/2 inch rounds.
  3. Quarter the baby gold potatoes.
  4. Chop the red bell pepper into 1 inch squares and cut the red onion into thick wedges.
  5. Toss the sausage, potatoes, peppers, and onions in a large bowl with olive oil, oregano, garlic powder, salt, and pepper. Note: Toss vigorously so everything is glossy.
  6. Spread the mixture on a parchment lined sheet in a single layer. Ensure no pieces overlap.
  7. Roast for 15 minutes until the sausage begins to brown.
  8. Remove the pan and stir in the broccoli florets.
  9. Return to the oven for 15 minutes until the potatoes are golden brown and broccoli tips are charred.
