Ingredients:
- 4 cups (600g) corn kernels
- 2 tbsp (30ml) unsalted butter
- 1 tbsp (15ml) neutral oil
- ½ tsp (3g) kosher salt
- 3 tbsp (45g) mayonnaise
- 2 tbsp (30g) sour cream
- 1 tbsp (15ml) fresh lime juice
- ½ tsp (1g) chili powder
- ¼ tsp (0.5g) smoked paprika
- ¼ tsp (0.5g) garlic powder
- ½ cup (50g) Cotija cheese, crumbled
- ¼ cup (10g) fresh cilantro, chopped
- 1 tbsp (15ml) extra lime juice
Instructions:
- Heat a 12-inch cast iron skillet over medium-high heat. Add the neutral oil and unsalted butter, swirling to coat the surface.
- Pour in the corn kernels in an even layer. Let the corn sit undisturbed for 3–5 minutes until mahogany-colored charred spots form on the bottom.
- Toss and sear the corn for another 3 minutes until golden and fragrant.
- In a small mixing bowl, whisk together the mayonnaise, sour cream, 1 tbsp lime juice, chili powder, smoked paprika, and garlic powder until velvety.
- Remove the skillet from the heat and immediately pour the creamy sauce over the sizzling corn. Stir gently to coat.
- Fold in the crumbled Cotija cheese and chopped cilantro, then finish with a final squeeze of extra lime juice.
