Ingredients:
- 4 cups (600g) fresh sweet corn kernels
- 1 cup (150g) cherry tomatoes, halved
- 1 medium (110g) red onion, finely diced
- 1 large (150g) avocado, cubed
- ½ cup (75g) crumbled feta cheese
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (5g) honey
- ½ tsp (2.5g) sea salt
- ¼ tsp (1.25g) cracked black pepper
- ¼ cup (15g) chopped fresh cilantro
- 1 tbsp (15ml) lime zest
Instructions:
- Cut the kernels off the corn cobs using a sharp knife, holding the cob upright in a bowl to avoid spills. Dice the red onion and halve the cherry tomatoes into uniform pieces.
- Place the corn kernels in a hot pan over medium-high heat and cook for about 5 minutes, stirring occasionally, until lightly charred.
- Combine the olive oil, lime juice, honey, salt, and pepper in a jar. Shake vigorously for 30 seconds until the mixture transforms into a thickened, glossy emulsion.
- Add the charred corn, tomatoes, and onion to a large bowl. Pour the dressing over the vegetables and toss gently.
- Fold in the cubed avocado and crumbled feta using a light touch to keep the avocado intact and feta from smearing. Garnish with fresh cilantro and lime zest.
