Ingredients:

  • 2 lbs chicken wings
  • 1 tbsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup honey
  • 1/3 cup Sriracha
  • 2 tbsp soy sauce
  • 1 tbsp unsalted butter, chilled
  • 1 tsp garlic powder
  • 1 tsp apple cider vinegar

Instructions:

  1. Pat the chicken wings bone-dry with paper towels to ensure maximum crispiness.
  2. In a medium bowl, toss the wings with baking powder, salt, and pepper until evenly coated.
  3. For oven cooking: Preheat to 425°F (220°C). Place a wire rack on a baking sheet and arrange wings in a single layer. Bake for 30 minutes, flipping halfway through. For air fryer: Set to 400°F (200°C) and cook for 18–22 minutes, shaking the basket every 7 minutes.
  4. While wings cook, combine honey, Sriracha, soy sauce, garlic powder, and apple cider vinegar in a saucepan. Simmer over medium heat for 5 minutes until slightly thickened.
  5. Remove sauce from heat and whisk in the chilled butter until the glaze is velvety.
  6. Toss the hot, crispy wings in the sauce immediately and serve.
