Ingredients:

  • 4 cups (600g) fresh corn kernels
  • 2 tbsp (30ml) unsalted butter
  • 1 tbsp (15ml) neutral oil
  • 3 tbsp (45ml) mayonnaise
  • 2 tbsp (30g) sour cream
  • 1 tbsp (15ml) fresh lime juice
  • 1/2 tsp (2g) smoked paprika
  • 1/4 tsp (1g) garlic powder
  • 1/4 tsp (1g) cayenne pepper
  • 1/2 cup (50g) crumbled Cotija cheese
  • 1/4 cup (15g) chopped fresh cilantro
  • 2 stalks (20g) sliced green onions
  • 1 tbsp (15ml) fresh lime zest

Instructions:

  1. Heat the neutral oil and unsalted butter in a cast iron skillet over medium-high heat until the butter is bubbling and starting to brown.
  2. Add the corn kernels in a single layer. Let them sit undisturbed for 2-3 minutes until they develop a mahogany-colored char.
  3. Stir and cook for another 3-5 minutes until the kernels are tender and fragrant. Remove from heat.
  4. In a small bowl, whisk together the mayonnaise, sour cream, lime juice, smoked paprika, garlic powder, and cayenne until smooth.
  5. Transfer the warm corn to a large mixing bowl. Pour the dressing over the corn and toss gently to coat.
  6. Fold in the crumbled Cotija cheese, chopped cilantro, sliced green onions, and lime zest.
