Ingredients:
- 4 cups (600g) fresh corn kernels
- 2 tbsp (30ml) unsalted butter
- 1 tbsp (15ml) neutral oil
- 3 tbsp (45ml) mayonnaise
- 2 tbsp (30g) sour cream
- 1 tbsp (15ml) fresh lime juice
- 1/2 tsp (2g) smoked paprika
- 1/4 tsp (1g) garlic powder
- 1/4 tsp (1g) cayenne pepper
- 1/2 cup (50g) crumbled Cotija cheese
- 1/4 cup (15g) chopped fresh cilantro
- 2 stalks (20g) sliced green onions
- 1 tbsp (15ml) fresh lime zest
Instructions:
- Heat the neutral oil and unsalted butter in a cast iron skillet over medium-high heat until the butter is bubbling and starting to brown.
- Add the corn kernels in a single layer. Let them sit undisturbed for 2-3 minutes until they develop a mahogany-colored char.
- Stir and cook for another 3-5 minutes until the kernels are tender and fragrant. Remove from heat.
- In a small bowl, whisk together the mayonnaise, sour cream, lime juice, smoked paprika, garlic powder, and cayenne until smooth.
- Transfer the warm corn to a large mixing bowl. Pour the dressing over the corn and toss gently to coat.
- Fold in the crumbled Cotija cheese, chopped cilantro, sliced green onions, and lime zest.
